Texas Style Mustard Potato Salad
Did you know that Texans love mustard?
I realize I’m not speaking for every Texan, but as someone who did not grow up in the Lone Star state it sure seems to me that it’s a favorite condiment.
When you order a hamburger, it comes with mustard as a standard condiment — no ketchup, just mustard.
Mustard is also a main ingredient in the “real” Texas potato salad that you find at barbecue joints. Of course, this is the kind of potato salad that my husband likes best. And, because I have never met a potato salad I didn’t like, I like it too. However, I didn’t know how to make it since I grew up eating totally different kinds of potato salads!
I stumbled around with a basic recipe that my mother-in-law verbally told me a long time ago. Through trial and error I came up with the version I’m sharing today. It’s loosely based on one that we eat at one of our favorite barbecue restaurants – and, as with most recipes, it can be tweaked to suit your own tastes.
