Happy Thanksgiving
Today is Thanksgiving in United States.
But you don’t have to live here to say thank you or to take a moment to be thankful for all that you have.
Today, I’m thankful for so many things: this blog, my readers, the friends I have made here, and of course, my family and the multitude of blessings we have enjoyed this year.
Here’s to wishing you a Happy Thanksgiving wherever you are!
(And, a Happy Hannukah, too!)

Apple Pumpkin Muffins Recipe
I love recipes that are easy, delicious and freeze well – especially around the holidays.
When you have family coming in for Thanksgiving or Christmas, or if you just want a special treat in the morning and you don’t want to fuss, then these Apple Pumpkin Muffins are just the ticket for making ahead and freezing to serve when needed.
Of course, eating them fresh out of the oven is absolutely divine but, we all know that having something ready to go when things get busy is a sanity-saver – especially when you’re already destined for a full day in the kitchen.
Not only are these delicious, but they’re a great breakfast, brunch or snacking treat to make whenever you have leftover canned pumpkin (which happens to me after I make my banana pumpkin bread).
I’d love to tell you that I came up with this recipe on my own or that it’s been handed down generation after generation, but like many of my best recipes, it was discovered, tried and now cherished.
I like to share them on this blog in the same way I would to pass them on to a friend. After all, aren’t we all looking for great recipes?
I will always give credit where it is due if the recipe did not come from me. In this case, I would love to provide the online source where I got it from. I promise, I tried to get the original link to where I got these, but try as I might, I could not find it. So, I’m just going to tell you where it came from: the Good Morning Texas program on WFAA-TV. Apple-Pumpkin Muffins

Delicious and easy muffins that freeze well.

Ingredients
- 1 1/2 cups flour
- 2 cups sugar
- 1 T. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup canned pumpkin
- 2 eggs
- 1/2 cup vegetable oil
- 2 cups chopped apples
For topping
- 2 T flour
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 4 tsp. butter (room temp)
Instructions
- Combine eggs, pumpkin and oil
- Blend all dry ingredients in
- Stir in apples
- Sprinkle topping over muffins and bake at 350 for 35-40 minutes
Notes
- I chop my apples very small because my kids don't like the big bits of apple in the muffin, but the larger chunks are delicious as well.

Christmas Decorating: Vintage Wash Tub
Remember my cute vintage wash tub?
She’s all decked out for the holidays.
Yep. I’ve started my Christmas decorating.
I didn’t do anything fancy, but the bright pops of red and green and the fresh plants make me happy.
It took just a few minutes to switch out my fall decor with a few simple winter plants and some metal holiday decorations I already had.
The plants (cyclamen and ivy) will need a minimum of care over the winter.
When Christmas is over, I can exchange the holiday decorations with something else.
My Christmas decor is just starting to take shape, but it’s a good start.

Christmas Pin-spiration
The holiday boxes and bins are coming out of the attic this week.
But, before I get started decking the halls I decided to check out my Pinterest boards for some new inspiration. After all, I pin these great images all year long for decorating ideas, so it might be a good idea to actually look at them before I start decorating.
And, I thought I would share a few of my favorite pins with you this week.
Here are five that caught my eye:
I just love the look and feeling of this room. Festive, yet not over the top.
I love the idea of using galvanized buckets to corral small packages under the tree!

Rich and Delicious Pecan Pie Recipe
If you’ve been reading my blog lately, you know that I love Thanksgiving.
I love the focus on being grateful, I love the traditional food and most of all, I love the pies.
In my opinion, Thanksgiving dinner just wouldn’t be complete without pumpkin or pecan pies.
Today, I’m honored to be participating in a Virtual Progressive Thanksgiving Dinner with more than 20 bloggers. Each of us bringing you our very best Thanksgiving dinner recipes, decorations and all of the things that make a Thanksgiving dinner special.
Today, I’m sharing my signature pecan pie recipe.
Yes…it’s my “signature” recipe.
(Kind of like Shelby in “Steel Magnolias” when she says that pink is her signature color)
It became my “signature” dessert several years back when I first start making pecan pie for my husband.
It was his very favorite pie and he always wanted one at Thanksgiving. And, me who believes cooking/baking is a way of showing my love was always happy to oblige.
I tried several recipes and each time he took a bite of a new version he would tell me what he did or did not like about it. It seemed like every recipe was good but was missing that certain something.
So, I continued trying recipes and then began tweaking and perfecting until I landed on just the right combination.
It is rich and delicious and I’ve been making it this way ever since.
It is always a hit with pecan pie lovers and non-pecan pie eaters alike.
I think it’s because I chop my pecans in to small pieces making it easier to eat and less offensive to those who don’t really love nuts (like me). The nuts blend in to the pie a little more so if you love the yummy inside, you’ll love the pecans, too.
Of course, if you love pecans then by all means don’t chop up the nuts! You’ll still love the pie!

Ingredients
- One pie crust for a 9 inch pie.
- 4 large eggs
- 3/4 cup sugar
- 1 cup dark Caro syrup
- 1/2 cup butter
- 1/4 cup firmly packed dark brown sugar
- 1 1/2 tsp. vanilla
- 1/4 tsp. salt
- 1 cup pecans, chopped*
Instructions
- Roll out pie crust and place in to a 9-inch pie plate and crimp the edges
- Whisk together eggs and next 6 ingredients in a sauce pan over low heat until well blended. Pour in to pie crust and sprinkle with pecans.
- Bake at 350 on lower rack 30 minutes or until pie is set.
Notes
- *Chopping the pecans is optional, you may leave them whole if you prefer.
