Gingerbread in a Mason Jar {Mason Jar Mondays}

When my kids were preschoolers, I was an assistant teacher at their school.  My final year of teaching, I worked with a sweet lady who had been my son’s teacher when he was four.

I can’t remember the occasion, but I do remember giving her a small bouquet of flowers I arranged in a pickle jar I had saved.  

I didn’t expect to get the jar back, but one day she came to me with the jar all cleaned up and empty.  She handed it to me and thanked me for the flowers and then said, “My husband thought I should return this to you because it’s a really nice jar.”  

I laughed and told her that although I liked the jar too, she could keep it because I had others at home.  I saved my pickle jars because of the nice shape and didn’t mind giving them to others. 

She thought it was kind of funny that her husband and I shared an appreciation for what she considered “throw away” jars.  

Girl, if she only knew!  I struggle with throwing away jars every time the jelly, the pickles or the maraschino cherries are gone!   Jars are just so darn handy and they are also cute!

That’s why I’m so excited to be joining some very creative friends every third Monday of the month for “Mason Jar Mondays.”

Each month, we’ll bring you creative ideas using Mason jars.  

This month, it’s all about Christmas/Holiday ideas so I decided to show you how to use 4 oz. jars to make a holiday favorite — gingerbread or gingerbread muffins.

These small jars make the perfect size muffin cups and, even better, the glass is so wonderful for even baking!  

I just sprayed them with a non-stick cooking spray and then filled them 3/4 full with gingerbread batter (I used this recipe for Bakery Style Gingerbread Muffins.)  I filled 8, 4 oz. jars and then placed them on a cookie sheet and baked for about 15 minutes.

They are easy to eat with a fork, they’re not messy and they’re the perfect single serving!

So, so simple and the addition of a little bakery string makes it festive!

You really can use these jars for any muffin recipe.
