I hope you all had a fantastic Fourth of July! We went to the Texas Hill Country for a mini-vacation with the family so I’ve been a bit MIA on the blog lately.
We had a great time relaxing by the pool and getting out on a pontoon boat on a nearby lake. The kids had a blast!
Now we’re home and it’s back to reality — like laundry and making dinner.
Which leads me to a question and a quick recipe.
Who does the grilling in your family?
I’m asking because in our family it’s me.
After we hosted a barbecue at our house a few weeks ago I apparently amazed our men neighbors (and the women, too) by standing at the grill and, well, grilling.
They couldn’t believe my husband wasn’t the one doing it and even days later when I would run in to one of them they would comment again on how they couldn’t believe I did all the grilling!
Yes, my friends, I am the pit master (and I use that term very lightly). But, I’m thinking that surely I’m not the only woman in the world doing it.
The fact is, we like grilled food and we eat it a lot. My husband works long hours and if I waited for him to do it we’d be eating at 10 p.m. I don’t want to eat at 10 p.m. So I do it myself. It’s kinda like DIY. If you want it, you figure out how to do it yourself!
Oh…and, if this recipe looks good to you, here it is:
In a bowl combine 1/4 c. olive oil
2 T. balsamic vinegar
Salt and pepper to taste
Whisk together.
Add cut veggies of your choice and toss together. Cook over an open flame in a grilling pan. Stir as needed. Veggies are done when browned and fork-tender.
It’s adapted from a Food Network recipe for Shish-Kabobs. It’s a marinade you brush on your kabobs. I loved the veggies so much I decided to try it this way and it works great for a quick and easy side!

I love it!! I grill too!! No reason for the men to have all the fun!! And my hubby does dishes, even if he grills!! Win Win!!
Yay! I knew I wasn’t alone! I’m still working on getting him to do dishes, though! lol
I have always been the one to grill, but this year I am getting hubby to do it more often and he is learning. Those grilled veggies look good. I just bought a grill basket and need to try it out.
